Crispy Thin-Crusted Pizza

This is a cheat’s thin crust pizza.  Super easy and come out crispy every time.

I wanted to eat pizza but was lazy to make the dough.. so I used Lebanese flatbread instead for the base.  As for the filling, I just put whatever I can find in my fridge 😉

Ingredients:

1 large Lebanese flatbread
1 bottle spaghetti sauce
2 tbsp labneh (strained yoghurt)
2 small eggplants, sliced thinly
1 large tomato, sliced
1 yellow capsicum, sliced
1 cup shredded grilled chicken meat
1 cup shredded cheese (monterey + cheddar + mozzarella)
1/2 cup grated parmesan
Some spinach leaves for garnishing

Method:

Spread the labneh on the flatbreat.  Spread the spaghetti sauce over the labneh.  Sprinkle with half of the parmesan.  Arrange the eggplant on top.  Spread some more spaghetti sauce over the eggplant and sprinkle with the remaining parmesan.  Arrange the tomatoes over the eggplant.  Scatter the shredded…
