Gluten Free Mexican Breakfast Burrito

Both my mom and sister are Celiac so I have become very conscious of gluten free cooking. While this recipe uses a gluten free wrap, feel free to substitute with a wrap of your choice. This recipe serves one – multiply for desired servings.

In a bowl combine:
1/4 cup diced bell pepper
1/4 cup diced white onion
1/4 cup egg whites
1 egg

Add to warmed frying pan and cook. When eggs are almost cooked add in 1/4 cup chopped grape tomatoes.

For this recipe I used La Tortilla Factory Smart and Delicious Gluten Free Wrap and added 2 TBSP mashed avocado, 2 TBSP salsa and 2 TBSP Greek yogurt. Put cooked egg mixture on wrap and roll into a burrito. If you would like a little kick feel free to add a dash of Mexican hot sauce.
