With spring finally here, my training has started to pick up again as I get ready for another race season. Longer training days equals greater calorie consumption – sometimes on the go as I transition from work to training to get the workout of the day in. If you ask my colleagues, I am always eating, but sometimes I need a little extra as I head out the door and these ‘Energy Balls’ provide the perfect kick. Last year I also made them for our annual backpacking trip and they seemed to be a hit as they didn’t last very long 🙂
I have played a lot with this recipe…changing ingredients in and out, but this batch has probably been one of the favorites so far. They freeze well and can be enjoyed either right our of the freezer or slightly thawed!
In a bowl combine:
1/2 cup oats
1/4 cup flaxseed
