Slow Cooked Moroccan Lamb


Winter is well on the way and now is a mighty fine time to dust off the slow cooker from the back of the cupboard and start warming it up for some tasty, hot meals to arrive home to on a cold, dark evening. Coming home to the scrumptious smell of Moroccan Lamb will make the chilly evenings a little cosier, and its tastiness is sure to warm you up from the inside out.


Serves 4:

2 tablespoons coconut oil

500g lamb mince

1 large onion

4 cloves garlic

2 teaspoons ground cumin

2 teaspoons ground coriander

¼ teaspoon ground cardamom

1 tablespoon chopped dried apricots

1 tablespoon chopped dried figs

2 tablespoon slivered almonds

2 teaspoons lemon juice

1 cup stock (or water if you don’t have any)

2 teaspoons honey

2 teaspoons chutney

1 teaspoon salt

1 tablespoon sweet chilli sauce

2 tablespoons chopped, fresh parsley
